Getting creative in the kitchen

Yesterday we received our first bin from Farm Fresh Delivery! They specialize in organic, natural, and local produce and other goodies. And, if it isn’t apparent from their name, they deliver right to your door. It is a lot less expensive than I expected too. Healthy, convenient, and affordable. What else could you ask for?

We’re doing the every other week plan, and this delivery brought asparagus, cucumbers, mushrooms, peaches, apples, cherries, bananas, milk, yogurt, and bread.

I sneaked a couple cherries last night. Tart and tasty.

And tonight we tried the mushrooms on some mini pizzas. I started with two whole-grain flatbreads. I spread alfredo sauce on one and sundried tomato pesto on the other. I added some frozen spinach and mushroom slices, and then topped them with mozzarella cheese. On the side we had some zucchini fries. For those, I sliced the zucchini, dipped the slices in egg, and coated them in a mixture of bread crumbs, parmesan cheese, and Italian seasoning. Pop it all in the oven at 400 degrees Fahrenheit for about 10-15 minutes (flip the zucchinis about half-way through), and dinner is served.
